Pork and Sweet Potato Curry

For the people who love pork in this dish you can definitely feel sweeter than other pork dish. Instead of potato in this dish we use sweet potato.


Ingredients

Pork - 500 g
Sweet Potato - 2 (midium size)
Oil - 1/2 cup
Oinion - 1
Garlic - 3 cloves
Ginger - 1/4 cup
Tumeric - 1 teaspoon
Salt - 1 teaspoon
Indian Curry Powder - 2 teaspoon
Fish Sauce - 1/4 cup
Tamarind - 1/4 cup (Soak in water)
Palm Jaggery - 1/4 piece
The following is the instruction of how to cook step by step in English
  1. Rinse pork and chop it into small chunks.
  2. Pound garlics and onions with sun dried chilli powder for curry paste.
  3.  Heat oil in a pan and panfry curry paste and palm jaggery when oil is hot.
  4. When curry paste start giving aroma, add pork, masala and fish sauce. Stir it continuously and mix curry well. When pork is fairly cooked, put water to the level that barely immerses the ingredient inside. Cook it with closed lid until pork is well cooked. You may adjust the water level by adding more.
  5. Peel sweet potatoes and rinse them. Cut them into large pieces and add them into curry. Add more water that is enough to boil sweet potatoes  and boil curry for 5 more minutes with closed lid.
  6. When sweet potatoes are well cooked, pour tamarind juice over curry and check the flavour. Add salt in an amount of your choice.  When soup is boiling and flavour is just right, it is ready to be served.
  7. Lastly, sprinkle masala before turning the stove off.
