Egg-plant and Roselle Leaf Soup 

Roselle leaf soup which have sour taste is common soup for Myanmar people. This soup is served in almost all part of Myanmar. Even in food donation ceremony, roselle leaf soup is major side dish you can fine. This time I am going to make the soup mix with egg-plant to get a special taste. Just for knowledge, roselle leaf is can easily mistake in look with marijuana leaf but different.


Ingredients
Fish - 2 (median size)
Eggplant - 2
Roselle - 5 bundle
Onion - 1
Garlic - 5 cloves
Preserved fish paste - a little

The following is the instruction of how to cook step by step in English
  1. Boil fish and let it cool down then Take its bones out and shred fish. Don't throw residual water out. It is going to be used for soup later.
  2. Grill eggplant until its inner parts become soft. Peel its burnt skin and rinse eggplant.
  3. Add a little bit of oil with crushed onions and garlics into pre heated pot.
  4. When onions and garlics start to sizzle and nice aroma is raised, add Roselle leaves and stir to make them softer.
  5. When they are soften and wilting enough, add shredded eggplant and fish, then stir.
  6. Add the residual water from step one plus tap water. Heat it up until it boils.
  7. When it starts to boil, put salt in lastly. You may also add chicken powder as well.
